Cheese Making: The Controlled Spoilage of Milk

How milk becomes cheese: acid and enzymes curdle it, microbes ripen it, and the entire diversity of cheese follows from four controllable variables.

Cheese is milk preserved by microbes — one of humanity's oldest biotechnologies, at least 8,000 years old, and still fundamentally a four-step process: curdle, drain, salt, ripen. Every cheese in the world is a variation on those controls, which is why the diversity of cheese is a story about enzymes, bacteria, and patience rather than mysterious artistry.

The coagulation

Milk's casein proteins are held in suspension as micelles stabilized by electrical charge. Two things can destabilize them: acid (from lactic-acid bacteria fermenting lactose) and the enzyme rennet (chymosin), which clips a stabilizing peptide off κ-casein so the micelles aggregate into a gel. Most cheese uses rennet or microbial chymosin; acid-set cheeses (paneer, ricotta, queso fresco) use heat and acid alone. Cut the curd, and it begins to expel whey — the size of the cut and the cooking temperature set the final moisture and thus the cheese class.

Ripening

Fresh cheese (mozzarella, queso fresco) is done in a day. Everything else is a controlled ecology: bacteria, yeasts, or molds metabolize lactose, proteins, and fats into acids, alcohols, amines, and sulfur compounds — cellular respiration pathways rerouted into flavor chemistry. Surface molds (Brie, Camembert), interior molds (Roquefort), washed rinds, and long-aged alpines all manage which microbes grow where, at what humidity, for how long. The blue in blue cheese is Penicillium roqueforti growing through deliberately pierced air channels.

The four controls

Every cheese reduces to four decisions: acidify how fast (starter cultures, temperature), remove how much water (cut size, pressing, cooking the curds), salt how much and when, and ripen how long and with which organisms. Gouda versus cheddar versus Camembert is a decision tree, not a mystery — enzymes and fermentation do the chemistry.
