How to Cook Potatoes: The Science of Every Method
Why potatoes behave the way they do — starch chemistry, variety selection, and what each cooking method (roast, mash, boil, fry) actually does to them.

The potato is the world's most adaptable staple and one of the least understood in home kitchens. Its behavior in every method — crisp roast, silky mash, firm salad potato — comes down to two kinds of starch and the temperatures that transform them. Understand that, and recipes become suggestions rather than scripture.
The chemistry that runs everything
Potato cells contain starch in two forms. Amylose (about 20–25%) is a linear molecule that leaches out during cooking and makes potatoes bind and fluff — it's why russets mash creamy and why over-mashed potatoes turn gluey (excess amylose released by ruptured cells). Amylopectin (75–80%) is branched and stays put, keeping cells intact — waxy potatoes hold their shape because of it. Variety is destiny: russets (high starch, low moisture) for baking, mashing, fries; yukon golds (all-purpose, medium starch, naturally buttery) for roasting and gratins; red/new potatoes (waxy, low starch) for salads, soups, and anywhere structural integrity matters.
What each method does
- Boiling cooks at 100°C max; water penetrates and swells starch granules. Start potatoes in cold salted water for even cooking — dropped into boiling water, the outside overcooks before the center finishes.
- Roasting needs surface dehydration for crispness: parboil first (10 min) to roughen the exterior into a starchy paste, then hot fat (goose fat or olive oil) at 200°C+ — the paste crisps into the crust everyone wants.
- Mashing: hot dairy, gentle mashing (a ricer is kinder than a masher), and the "gluten" fear is misplaced — potatoes have none; the gluey enemy is overworked starch.
- Frying is a two-temperature project: lower temp (160°C) cooks the interior, higher temp (190°C) crisps the exterior. One temperature tries to do both and fails at both.
- Baking: pricking vents steam, a light oil coat crisps skin, and resting 5 minutes post-oven finishes the interior starch gelatinization.
Selection and storage
Choose firm potatoes, no green tint or sprouts — greening means solanine, a mild toxin that tastes bitter and survives boiling (functional groups explains why alkaloids are bitter). Store dark, cool, ventilated — not the refrigerator, which converts starch to sugar and browns fries prematurely.
